Yam and egg (omelet)

African yams are white, starchy tubers with a slightly sweet taste, cooked by boiling or deep frying. For this dish, yam is sliced, boiled and paired with a filling omelet and a rich red mackerel stew.

The omelet is from beaten eggs seasoned and cooked with peppers and onions.
